I am traveling to UK soon with my girlfriend for an exchange programme. My girlfriend is not a Brit and she will also participate in the exchange programme. We each hold a Mainland China passport with a short-term student visa. The exchange period starts days later than the date we arrive in UK. We will live together in a hotel or Airbnb before we head to our university. We don't live together on campus.
When asked by the border control what our relationship is, should we say that we are boyfriend and girlfriend or should we say that we are friends?
Should we pass the border control together or individually?

Tell nothing but the truth. If you lie about anything and they suspect it, they will ask more (and more instrusive) questions and possibly send you to secondary screening in order to catch some dirt.
That said, since you already hold an entry clearance (visa), the questions will usually not be many, as an ECO has already assessed and pre-cleared you for entry.
So relax, as long as you answer the questions honestly and confidently you'll be fine (don't be afraid to tell the officer if there's anything you don't understand)

One point you didn't mention in the question, are both of you foreigners (in the eyes of the UK that is)?
If you are both foreign nationals, then there is no drawback to being in a relationship. The immigration officials are more concerned with the big two, why are you visiting and will you go home. So tell the truth.
If one of you is a British national, then perhaps the relationship might be of interest to the immigration official. Again tell the truth, but be prepared for more questions.
