Peru: Can I reserve the hostels on the same day I arrive in a new city?

I'm planning to have a trip around in Peru and I was wondering if I can just reserve the hostels on the day I arrive in a new city or if I should call them a few days before. I'm traveling in April.

I can also try more than one hostel, of course I need to arrive before evening in each new location.
